(School) Fun in the Sun

It is such a gorgeous day today! Its breezy, warm, and fabulous.

After classes this morning I went back to my apartment to send a few e-mails and decided that it was far to nice to be inside. I packed up my backpack, hopped on my bike and headed down to the Food Co-op for some Pad Thai that was on today's hot bar menu. The Pad Thai was great and it had probably the best tofu that I have had to date in it (that is not saying much, I have only had it a handful of times). Then I jumped back on my bike and headed back to campus to sit outside for a while, which is where this post is coming to you from.

I have to head to class but I'll be back again soon with more munchings.

Weekend Recap

Friday I finished up my second week of school. Time flies when your having fun? :/ I packed a lot in on Friday - a pre-class workout, class, phone banking for a student organization I joined, a clean-out-the-fridge lunch, a little work, and a brief hike to the bus station to go home!

Let's start with Fridays lunch. Spinach salad with the last of the sun sprouts, last of the tomatoes, a peach, balsamic vinegar, EVOO, and s+p. And to the right a turkey (last of the turkey), hummus, and sun sprout sandwich - delicious!




Next up was the bus. This was my first experience riding the Greyhound, and it was memorable. Most notably because of the intoxicated man who hopped on the bus during our first stop shouting "Hola! Como estas?" while blinking and squinting his right eye. . .


I have to be honest, I was slightly relieved to be off the bus at that point but I am sure I will do it again. I had a great (too short) weekend at home! It was so wonderful to see my Mom, Dad and sisters. I also saw quite a bit of my extended family when we celebrated my Grandpa's 82nd Birthday on Saturday night - it is a rare but special occasion when everyone is able to get together. AND then I saw my other Grandpa and Grandma this afternoon before I left to come back to school! I am so lucky to be surrounded by such a wonderful family.

I tried to carry the excitement and enthusiasm of the weekend back with me to school (in hopes that it would fuel the homework that needs to be done ASAP). However when that fails we must turn to lattes with our names spelled wrong on the side for fuel.

Saturday Morning @ the Farmers Market

Happy Saturday!

This morning I headed out to the Farmers Market with my friend Abby and we met my friend Emily there as well. Today was Abby and Emily's first time meeting and everyone really hit it off! We had such a great time walking around and afterwards we got coffee and chatted for a little bit. Farmers Market finds for the day included apples, peaches, cherry tomatoes, micro-greens, sun sprouts, green beans, and Zingerman's Creamery Pimento Cheese. I have a lot of healthy eating to do this week!



Emily bought these gorgeous flowers from one of the market vendors.


Well I am off to follow through on some big Saturday plans that include homework and laundry. Have a fab Saturday!

I Survived the First Week!

Hooray! I survived my first week of school (well it wasn't actually a full week - I have yet to endure a Monday at school). I am definitely interested in some classes more than others but its nothing that I can't handle. Today I had one class, one massive class; there must be 350+ people in that class!

This evening I walked around downtown A2 with a friend. Stops included: Starbucks, a couple cute shops, and my favorite deli ever! On my way back to my apartment I couldn't resist stopping for some fro-yo (frozen yogurt). Fro-yo seems to be blowing up in the blog world. Many fro-yo shops are self serve with tons of flavors and toppings to choose from. My mix included chocolate and espresso fro-yo with strawberries, raspberries and cookie pieces - delicious! Sorry, I didn't leave you much to enjoy. . .

First Blog Post Ever!

Hello, and welcome to my blog! As a reader of many blogs (mainly, OK only, food blogs) I am excited to begin chronicling my journey towards a healthy balance, as well as my other adventures in the great Mitten and beyond! So lets get to it. . .


I am already enjoying the benefits of being at a large university. Last night, I attended a event hosted by the College Democrats intended to get students and community members excited about the 2010 elections. Speakers at the event were Gov. Howard Dean and Congressmen John Dingell, Mark Schauer, and Gary Peters. Regardless of political preference it is always interesting to hear what your Congressmen (and women) have to say because after all they are your voice in Washington DC.


I particularly enjoyed hearing John Dingell speak. Congressman Dingell has been representing Michigan's 15th District since 1955 and is currently the longest standing member in the House of Representatives. As you can imagine he has helped many pieces of legislation pass over the years include Medicare and the Clean Air Act. It was truly an honor to hear him speak and one of the many opportunities I will enjoy at my new school.


So that was yesterday! Now on to today, which almost seems comical compared to yesterdays excitement. I had two classes today, both of which went well! During my last class my stomach was screaming at me, I headed straight back to my room to eat lunch, read blogs in my Google Reader, and watch last nights episode of Top Chef. And so I leave you with lunch (and since I don't know how to use Blogger lunch is sideways)! I hope everyone is having a great day!
